I have been unable to trace any census or death record for my gg grandfather, Moses Hall, after the 1871 census. However, I have now got a marriage certificate for one of his daughters, Elizabeth Ann, who married Thomas Willerton at St Paul's Stalybridge on Dec 12th 1885. On that certificate Moses is named as her father and his profession as contractor. Would it have his name on even if he had died - maybe with deceased after it?

Yes the father's name and occupation would be shown. It is usual for "deceased" to be added if the father is no longer alive. However this didn't always happen and I have seen many marriage certificates with the father's name shown as if he was living when I knew for a fact he was not.
